ENNAROM: Quality, safety, and naturalness as our signature
To industrialize a traditionally artisanal process, Ennolys, a business unit of the Lesaffre Group, has specialized in developing natural ingredients through microbiological processes.
These ingredients are intended for flavor and fragrance houses, as well as the food, nutraceutical, cosmetic, and pharmaceutical markets.

Ennolys operates a state-of-the-art industrial facility — featuring large-scale fermenters and distillation units — enabling the production of a range of molecules known as ENNAROM. All are derived from natural raw materials using processes such as bioconversion, biosynthesis, or enzymatic catalysis. The flagship molecule of this range is natural acetaldehyde.
Certified Kosher and Halal, ENNAROM natural aromatic molecules comply with both European (EC 1334/2008) and U.S. (Natural US per FDA regulation 101.22(3)) standards regarding natural flavoring substances. Beyond this commitment to quality and product safety, the traceability and natural origin of raw materials are top priorities in the production of the ENNAROM range. This pursuit of performance and excellence is also driven by Ennolys’ R&D team, dedicated to the continuous improvement of these natural aromatic molecules.

Acetaldehyde, seven acids, and two lactones make up our portfolio of natural aromatic molecules, each offering unique olfactory and taste characteristics. They are used in numerous natural flavor formulations under the label “natural flavoring substance.”
- Acetaldehyde, produced from natural alcohol, gives a fresh, unique, green aromatic note. It is one of the most widely used molecules in fruit flavours.
- Acids (C2 to C6) are used in savory flavors to enhance cheesy and dairy notes, and in fruity flavors to add freshness or highlight ripe fruit characteristics.
- Lactones, produced by fermentation from natural fatty acids, provide creamy and milky notes. They bring roundness and add peach (gamma-decalactone) or coconut (gamma-octalactone) aromas.
Each flavor formulated with these natural molecules can be used across the three main food sectors: beverages, sweet products, and savory products.

Organic Acids

Acetaldehyde

Gammadecalactone
A liquid with an intensely fruity aroma, the natural gamma-decalactone produced by Ennolys evokes peach aromas with a creamy, velvety touch. It is an essential molecule for adding roundness and richness to aromatic compositions, particularly in fruity, dairy, and pastry profiles.

Gammaoctalactone
A liquid with a sweet and delicious aroma, the natural gamma-octalactone produced by Ennolys evokes characteristic notes of coconut and warm milk with a fresh mint finish. It is prized in aromatic formulations for its creamy, rounded, and tropical accents, which enrich gourmet, milk, and exotic fruit profiles.
