The Ennolys team was present at the FIE to promote Ennallin, our natural vanillin produced by fermentation in Soustons in the Landes region. Used in the food industry, vanillin was used in brioche at a dosage of 100ppm, allowing a 30% reduction in sugar use, and 0.4% in madeleines.
